I have set an invoice theme as default but its not what I want

How do I undo a default on an invoice theme

Hi Christine,
Head to Settings > Invoice Themes > All. Here you can choose the invoice theme you would like by choosing 'Set as default'. Then you can select 'apply to all' so that this is the invoice theme used.
