using different emails to send out invoices

I have set up different invoice themes as I do accounts for several different clerks to send out invoices for them using their own individual company names. How can I send out these invoices for them using a different email address and not just the default one ?

There isn't an option to do this simply at the moment, however there is a workaround which I have explained in the post below. If you have any queries about it please let me know.
