As far as I understand, when applying the reverse charge, the customer's VAT number needs to be displayed on the invoice. Bringing me to the question: why does it not appear our invoices?

Can you check under Settings>Invoice themes > your default theme whether the customer tax number has been chosen to be shown on the invoice or be hidden. If you make sure the option to show on the invoice is selected, it should show up below the address field on the customer invoice.
